As a user I am able to create a new Stock Count, update the counted values but am not able to post the adjustment entries?
To be able to work with Stock Counting Plugin, the user must be assigned the Stock Count role under Inventory Transactions with appropriate permissions.

If you are not able to post the adjustment entries, you need to check if you have been granted adequate permissions.
Add / Update permission will allow the user to Create a new Stock Count, update the counted values and NOT post the adjustment entries.
